Frantz Saumon’s Cave Se Rebiffe (“The Cellar Rebels”) is a wine that wears its natural roots proudly. A zero-sulfur, unfiltered white from the Loire—usually based on Chenin with a splash of something unexpected—it’s bottled with a little haze, a lot of energy, and no pretension. The 2023 vintage is especially lively: fresh, slightly wild, and full of juicy charm.

It opens with cloudy citrus, tart apple, and a hint of yeasty funk—like lemon zest meets cider meets pét-nat, but still unmistakably a still wine. On the palate, it’s bright, dry, and mouthwaitering, with a little texture and just enough grip to keep it grounded. There’s no oak, no additives, and no need to overthink it.

Frantz set up his domaine in Montlouis in 2002 after bouncing between forestry and wine, landing finally on natural fermentation in stainless steel and wood. He makes pétillant naturel instead of traditional Champagne—alive, experimental, totally honest. Six hectares plus purchased fruit, organic and biodynamic from the start.
