Miho Imada is one of only a few dozen women working as toji — head brewer — anywhere in Japan, and she runs her family's brewery in Akitsu, the Hiroshima town where soft-water brewing was worked out in the late 1800s and where ginjo sake effectively began. Imada Shuzo has been there since 1868; she took over the brewing in 2000. Moon on the Water is junmai ginjo, meaning pure rice sake with no added distilled alcohol, made from Yamada Nishiki milled down to 55% of the original grain, which is where the clean, fragrant lift comes from. It goes into bottle without charcoal filtering, so the aromatics stay intact rather than being polished away. Serve it cold, around cellar temperature or a touch cooler, and pour it into a wine glass rather than a thimble.

Pear, honeydew and yellow apple with a hint of sweet rice and anise. Light on its feet and gently round in the mouth, dry rather than sweet, with soft acidity and a clean, quiet finish.
