Buffalo Trace treats every release of George T. Stagg as its own vintage, with proof and profile shifting slightly from one fall to the next. That makes this 2014 bottle a chance to taste one specific year of a benchmark American bourbon, not just whatever made it to this year's shelf. Stagg is the distillery's limited-edition flagship. It comes from the rye-recipe Mash Bill #1 and is aged at least 15 years in new charred oak in the "honey spots" of the best warehouses. Every barrel is hand-selected, and the whiskey goes straight from barrel to bottle: uncut, unfiltered, no water added. Fittingly for a bourbon this serious, George T. Stagg wasn't a distiller at first. He started out as a whiskey salesman in St. Louis after the Civil War. He and a partner bought the O.F.C. Distillery and built what became Buffalo Trace, which an industry expert in 1890 called the "ne plus ultra of its class," and which kept running straight through Prohibition. It's bottled at full barrel proof, so pour small and add a few drops of water until it tastes right to you.
