Manhattan's first legal whiskey distillery since Prohibition makes this on Great Jones Street in NoHo, and it is the softest thing in their lineup. Wheat in the mash bill is what does it — it rounds a bourbon out and pulls back the pepper you get from a rye-heavy recipe. The grain is all New York, corn, wheat, barley and rye grown in the Black Dirt country of the Warwick Valley, mashed with Catskill Mountain water, and the whiskey is aged four years in American oak and bottled at 90 proof. Drink it neat or over one big cube; it also makes a gentler, rounder Old Fashioned than a high-rye bourbon will.
