Pinot Blanc is the underrated grape of German sparkling wine, and this is the bottle that makes the case: the power of Pinot Noir crossed with the density of Chardonnay, plus a white-pepper kick that belongs to neither. Griesel builds it from two soils on purpose — half the fruit from the house's own weathered granite slopes in the Hessische Bergstraße, half from limestone vineyards in the Pfalz — so you get the granite's salinity and nervy acidity layered over limestone's breadth. Prestige is the single-variety, single-vintage tier at Griesel: a year in barrel, roughly three years on the lees, then disgorged brut nature, with no sugar added back at all. The house was founded in 2013 in Bensheim, in the cross-vaulted cellars of the old Hessian State Winery, and works entirely by traditional method with hand-harvested fruit and spontaneous fermentation. Rich in flavor without being heavy — the kind of sparkling wine that holds up through a whole meal rather than just the first ten minutes of one.
