A single-vineyard Sekt from a cool, fractured granite slope that Griesel bottles only in years it thinks are worth it — and 2020 got six years of patience: one in used barrel, then five on the lees before disgorgement with zero dosage. The Fürstenlager parcels sit between 150 and 200 meters on the Auerbach hillside, positioned where cold air drains down out of the Odenwald forest at night, and that steady chill is why the wines from here come out taut and vertical rather than broad. The granite itself weathers into thin, sandy, hungry soil, which is where the lively acidity and the salty snap on the finish come from. The vineyard shares its name with the Staatspark Fürstenlager, the 18th-century summer retreat of the Landgraves of Hesse-Darmstadt just up the slope. Griesel, founded in 2013 in Bensheim in the old Hessian State Winery cellars, is one of a small handful of German houses making traditional-method Sekt at this level of ambition. Serve it in a proper white wine glass, not a flute — the detail is the whole point.

Perfect Pairings

Turbot or halibut with beurre blanc, langoustines, or a delicate sushi and sashimi run. Also lovely with a soft-boiled egg and trout roe.

Tasting Profile

Lemon oil, white flowers and lightly caramelized orchard fruit, with a waxy note that emerges as it warms. Medium-bodied with a creamy, coalesced mouthfeel, high fine acidity and no sweetness whatsoever. Long, mineral and delicately savory on the close.
