The warm, exposed half of Griesel's single-vineyard pair — same grape, same vintage, same six years of aging as the Fürstenlager bottling, and a completely different wine. The Höllberg sits on a sandy, free-draining plateau between 150 and 210 meters with no forest to cool it at night, so the vines work harder and the Sekt comes out fuller, spicier and more overtly flavorful, where the Fürstenlager is cool and vertical. Underneath the sparse topsoil is the region's weathered granite, with a loess-clay overlay here that adds a little more depth of extract. The wine spends a year in used barrels, then five years on the lees before it is disgorged with zero dosage, and the length of that lees aging is exactly why a wine with no added sugar tastes rich instead of severe. Griesel has been making traditional-method Sekt in the cellars of the former Hessian State Winery in Bensheim since 2013; single-vineyard bottlings like this one only appear in the vintages that earn them. Tasting Notes & Food Pairings

Perfect Pairings

Roast pork loin with apples, duck confit, or a good aged Gouda. It has the weight for mushroom-heavy dishes and for a wintry chicken pot pie.

Tasting Profile

Dried apricot, lemon pith, baking spice and burnt caramel, with brioche underneath. Fuller and more mouth-filling than most Sekt, but still dry and driven by firm acidity. The finish is warm, spicy and persistent.
