Six years on the lees, from vines planted in 1989 on cool granite — the oldest Pinot Noir Griesel farms, and the most serious wine the house makes from the grape. This is a blanc de noirs: white sparkling wine pressed off black Pinot Noir grapes, which is where the sanguine, faintly meaty depth comes from. The Auerbacher Fürstenlager sits at 150 to 200 meters on a fractured hillside that gets a nightly wash of cold air draining out of the Odenwald, and the granite weathers into thin, sandy soil that gives the wine its stony core and salinity. Dosage zero means the wine was disgorged with nothing added — the six years of yeast contact, not sugar, is what gives it flesh. Griesel, working since 2013 out of the former Hessian State Winery cellars in Bensheim, only makes these single-vineyard bottlings in the vintages it considers worthy. Decant it or pour it into large glasses and give it air; there is a lot going on and it takes its time.

Tasting Profile

Red spice, blood orange and a savory, almost meaty edge over red-fruit skin. Medium-bodied and vinous, with real grip and a stony mineral core; bone dry, high in acidity, fine in bubble. The finish goes on and on.
