Sparkling Riesling is usually the least interesting thing you can do with the grape — tank-made, sweetened, and often carrying that hard reductive, faintly plasticky note. This is the corrective. Griesel treats Riesling exactly like its Chardonnay and Pinot: hand-harvested, spontaneously fermented, aged in barrel for a year and then roughly three more years on the lees in bottle, and disgorged brut nature, with nothing added back. The result has a savory complexity — blueberry, white pepper, a mushroomy note — that sparkling Riesling almost never shows, finishing on the granitic stone of the Hessische Bergstraße, where the bedrock weathers into thin sandy soils that push acidity and salinity. The house works out of the cross-vaulted cellars of the former Hessian State Winery in Bensheim, revived in 2013 as the Bergstraße's first Sekt house, and has become one of the producers most responsible for Germany's sparkling revival. Lighter in body than the Pinot bottlings and a natural aperitif, but with enough going on to hold your attention.
