A sparkling rosé with actual body — 100% Pinot Noir, fuller and more aromatic than Griesel's white Pinot Noir bottling, and vinous enough to drink with dinner rather than just before it. It sits in the Prestige tier: single variety, single vintage, a year in barrel and three years on the lees before disgorgement. Extra brut means a whisper of dosage rather than none at all — a few grams of sugar at most, just enough to soften the edges of a wine this taut without ever reading as sweet. Griesel farms weathered granite in the Hessische Bergstraße, a narrow strip of vineyard between Darmstadt and Heidelberg, and has been making traditional-method Sekt from the old Hessian State Winery cellars in Bensheim since 2013. There is a spicy backbone here and a tense core of acidity holding the fruit in place. Genuinely versatile: a late-summer barbecue bottle and a New Year's Eve bottle in equal measure.
