100% Pinot Meunier with zero dosage — a purist's Champagne that celebrates this often-overlooked grape in its most unadorned form. The name is the joke and the point: Meunier was long treated as the third-class citizen of Champagne, banned in spirit if not in law from the blends of serious houses, and this bottling puts it alone in the spotlight with no sugar added to soften it. Richard Fouquet, fifth generation at this 1885 family house in Cramant, sources the fruit from very old vines in Mardeuil, down in the Vallée de la Marne where Meunier truly belongs, and ages a portion of the wine - about 20% - in neutral oak barrels. Fouquet farms organically and works by hand, and while Guiborat is best known for chalky Grand Cru Chardonnay from the Côte des Blancs, this is the estate showing its other side: broader, rounder, more overtly powerful. The 2022 season was warm, sunny and generous in Champagne, giving unusually ripe Meunier while holding on to acidity. A Champagne for those who want to taste the grape, not the dosage.

Perfect Pairings

Roast chicken, mushroom risotto, or a croque monsieur. The extra breadth handles pork belly, duck rillettes and creamy washed-rind cheeses.

Tasting Profile

Apple, pear and white flowers with an herbal edge, plus brioche from extended lees aging. Broader and rounder in the mouth than a Chardonnay-based Champagne, with a fine mousse and firm acidity. Bone-dry, mineral and slightly savory on the finish.
