Dominique Hauvette has been giving Cinsault more and more of her attention in recent years, enough that she now bottles it on its own, and this is that wine: 100% Cinsault from IGP Alpilles. Her domaine sits in the foothills of Les Alpilles near Saint-Rémy-de-Provence, the town where Van Gogh painted "The Starry Night." The vines grow in clay-limestone soils that hold moisture through the dry summer, surrounded by garrigue, with the Mistral blowing half the year. Hauvette was a lawyer in the Savoie until the early 1980s, when she left to find more sunshine. She went back to raising horses, studied oenology and founded the domaine in 1988. She has farmed biodynamically since 2000 and was one of the first winemakers to use concrete eggs. Earlier vintages of this cuvée came out so pale and zesty that you could wonder whether it's really a rosé. For a small, serious estate, it's a playful, unfussy way into what she does.

More about Hauvette

Dominique Hauvette is the winemaker of Les Baux de Provence’s Domaine Hauvette. Her meticulous approach to winemaking, combined with the unmatched terroir of Provence, make for some pretty spectacular wine.

Her range is broad, and exciting: multiple red cuvées, a classic, yet elevated Provençal rosé and several white wines. She often keeps bottles at the domaine for years, or even half a decade. They are still incredibly lively and youthful, full of dark red fruit and tons of garrigue.

Tasting Profile

Expect a pale, light-bodied red in the classic Cinsault mould: crunchy strawberry, raspberry and red cherry, with a whiff of Provençal garrigue herbs and white pepper. Tannins are typically soft and the acidity bright, finishing dry, fresh and juicy. Think a lighter Beaujolais that edges toward rosé territory, and it's lovely with a slight chill.
