Henri Boillot is a fifth-generation Burgundian who runs both a domaine and a coveted negociant house out of Meursault, and he built his name on whites that are taut, pure, and precise. This is his village Puligny-Montrachet from 2017, a generous and healthy vintage for white Burgundy that gave wines with ripe fruit and the acidity to keep them honest. Boillot's touch is famously light: whole-bunch pressed, no lees stirring, and raised in oversized 350-liter barrels so the wood frames the wine rather than gilds it. Puligny is the address people dream about, and even at the village level, in Boillot's hands, it delivers the chalky drive the commune is known for. It's drinking beautifully right now.
