Villers-Marmery is the odd village out on the Montagne de Reims — a Premier Cru slope planted almost entirely to Chardonnay in a stretch of Champagne that is otherwise Pinot Noir country, which is exactly why its wines taste like nowhere else. This Blanc de Blancs is drawn entirely from there, made by Henriet-Bazin, a grower family now in its fourth generation working chalk-based vineyards across Premier Cru Villers-Marmery and the Grand Crus of Verzy and Verzenay under HVE certification. It is finished Extra Brut, meaning only a trace of dosage, so there is no sweetness to smooth over the wine's citrus cut and chalky grip. Champagne like this rewards a proper white-wine glass rather than a flute, and a little warmth in the glass rather than an ice bucket.
