I Custodi is the darling of local owner Mario Paoluzi, with Salvo Foti in the cellar. The wines follow the same rigorous guidelines as all of the projects Salvo consults on: organic fruit, alberello-trained vines, and a very light touch in the cellar to showcase the terroir first and foremost.
Aedes is from young vines in the Mognazzi contrada, a field blend of approximately 70% Carricante, 20% Catarratto, and 10% Grecanico and Minella. Most of the season was dry until late August, which helped the fruit cross the finish line for harvest in September.
Fermentation and aging occur in stainless steel with less than 60 mg/L of sulfur. The wine is crisp, with orchard fruit, sunshine, smoke, and salt. It's endlessly easy to pair with food: seafood, fried chicken, cheeseburgers, Thai, or on your front porch.
