Etna white made for the dinner table rather than the trophy case. I Custodi — 'the guardians' — is Mario Paoluzi's estate on the volcano, with Salvo Foti, the man who revived Etna's historic I Vigneri growers' guild, guiding the cellar. Aedes takes its name from the Latin for home, and it is a field-blend white led by Carricante and filled out with Catarratto, Grecanico and Minnella, from vines around 650 meters up in the Moganazzi contrada on the north slope and Mertoli on the eastern side, in sandy volcanic soil. There is no oak anywhere near it: a soft press, fermentation in stainless steel, and about six months resting in the same tanks, so what you taste is fruit, salt and volcano. 2024 ran dry through most of the season before late-August rain carried the fruit to a September harvest. It is one of the easiest wines in the range to put on a table — seafood, fried chicken, Thai takeout, or nothing at all.
