IWA 5 is the sake project of Richard Geoffroy, former chef de cave at Dom Pérignon. Assemblage 5 blends three top sake rice varieties and five yeast strains for depth and precision.

Brewed in Toyama and bottled as genshu (undiluted), this Junmai Daiginjo is aromatic, dry, and layered. A modern, terroir-driven sake shaped by Champagne blending philosophy.

Richard Geoffroy, the former Chef de Cave at Dom Pérignon, left Champagne to build something radical in Toyama, Japan: a sake that blends five distinct yeast strains to create a single, harmonious spirit. Architect Kengo Kuma designed the brewery; bottle designer Mark Newson shaped the bottle. It's artisanal sake on a scale only Geoffroy could imagine—and it shows.
