A village Chassagne that drinks like a 1er Cru. Les Encégnières is a stony plateau lieu-dit shared between Chassagne and Puligny, sitting just below Bâtard-Montrachet — and Bachelet's tiny piece is planted to roughly 50-year-old vines on the Chassagne side. Jean-Baptiste and Benoît Bachelet, the third generation now running the Saint-Aubin estate, treat this parcel as their flagship village white. The 2021 is a cool, classical vintage tailor-made for their precise style: white peach, lemon pith, hawthorn and crushed limestone, with the kind of cut and salinity that comes from old vines on shallow clay-limestone. Built to drink now or rest five-plus years.
