This is Beaujolais from the man everyone calls "Le Chat": Jean-Claude Chanudet, who has spent decades making Gamay the way Jules Chauvet taught, with semi-carbonic fermentation and a light touch. Eric Texier, a winemaker who loves Beaujolais, thinks no one works closer to what Chauvet intended. That's quite a thing to say about anyone. The Cuvée du Chat comes from a 2.5-hectare parcel on granite soils that Chanudet bought with Marie Lapierre in 2010, so two names that mean a lot to Beaujolais lovers share this one plot. For all his old-school instincts, Chanudet is also meticulous about lab analysis of his wines. He's retired on paper and has handed the family domaine to his daughter Jeanne, but he's still in the vines and the cellar every day. It's serious Beaujolais made to be enjoyed, not fussed over. Give it a slight chill and open it on a weeknight.
