This wine is named after a rock, and once you taste it you'll understand why. Amphibolite is the greenish, iron-rich metamorphic bedrock beneath these Muscadet vines, and Jo Landron—one of the pioneers who dragged the region's reputation up over the last few decades—built this cuvee to bottle it. Melon de Bourgogne, farmed biodynamically, aged sur lie for that faint saline prickle and gentle texture, then left bone-dry and low in alcohol. The result is all oceanic snap and mineral cut, the platonic ideal of an oyster wine. Chill it hard, open it wide, and don't overthink it.
