Elisa is the easiest way into the first Demeter-certified biodynamic estate in Pouilly-Fumé, and it's the bottle that shows each new year first: it is always the first wine the domaine bottles. Jonathan Didier Pabiot started young. He talked his father Didier into converting the family vineyards to organic farming, and in 2016 the domaine became the appellation's first certified biodynamic estate. Elisa, named like its sibling Léon for the Pabiot children, comes from vines just four to ten years old. They grow on clay-limestone and flint-clay soils facing south and south-west near Pouilly-sur-Loire. The farming is no less serious for an entry-level cuvée: vines are planted at 10,000 per hectare. In the cellar, fermentation runs on native yeasts with no added enzymes, and sulfur is kept to a minimum. Pouilly-Fumé is too often generic Sauvignon Blanc, and this is a grower's version that costs about what you'd pay for an everyday bottle.

"Bottled just three weeks before my tasting, the 2025 Pouilly-Fumé Elisa is a youthful and flavoursome Pouilly-Fumé. Peppery savouriness is a nice complement to dried apple and candied pear. Its strength and good grip take it a step up from the average aperitif wine." —Rebecca Gibb MW

More about Jonathan Didier Pabiot

Jonathan Pabiot is one of the growers giving Pouilly-Fumé, long in the shadow of Sancerre across the river, a new sense of purpose: organic and biodynamic farming, wild-yeast fermentations, and Sauvignon Blanc that tastes of stone rather than cut grass.

The Pabiots have farmed at Les Loges, a riverside hamlet near Pouilly-sur-Loire, for generations. Jonathan, once a local motocross champion, started in 2005 with three hectares inherited from his grandfather and began converting to organic farming with his very first vintage. In 2010 he joined forces with his father Didier, who farmed about fifteen hectares, and the estate became Domaine Jonathan Didier Pabiot. Its roughly twenty hectares are certified organic and, since 2016, biodynamic: no herbicides or synthetic treatments, hedges and fruit trees around the plots, and everything picked by hand.

The soils are the appellation's classic mix of Kimmeridgian marl, limestone and flint. In the cellar, slow cool pressing, native yeasts and long lees aging in steel, concrete, wood or amphora, with no fining or filtration. The cuvées carry family names: Elisa, for his daughter, from young vines, and Léon, for his son, the flagship. Smaller single-soil wines such as Luminance and Eurythmie and a little Chasselas fill out the range. Expect precise, transparent, quietly intense Pouilly-Fumé.

Tasting Notes & Food Pairings

Perfect Pairings

Crottin de Chavignol or other fresh goat cheese with herbs, raw oysters, seared scallops, asparagus with hollandaise, ceviche, sushi, or leeks vinaigrette.

Tasting Profile

Expect the classic Pouilly-Fumé profile: lemon, grapefruit and gooseberry, with the smoky, gunflint edge the appellation's flint soils are known for. Young vines and an early bottling usually mean a fresh, lively wine. A little lees texture fills out the light-to-medium body, and bright acidity carries it to a dry, clean, mineral finish.
