Julien Pilon’s 2019 L’Élégance du Caillou lives up to its name. This is Cornas that keeps its wild heart but wraps it in elegance—structured, savory Syrah that’s built on granite bones but polished with care.

The nose is full of blackberries, violets, crushed rock, and smoky herbs. On the palate, it’s deep and layered, with firm but fine tannins, dark fruit concentration, and a mineral streak that gives it real lift. There’s no excess oak, no over-extraction—just pure fruit, stony texture, and a long, savory finish.

While many Cornas wines go big and brooding, Pilon leans into nuance and freshness. It's a wine for lovers of Syrah with tension—powerful, but never heavy-handed.

Julien Pilon studied winemaking, worked across Roussillon to Spain, then launched his own micro-négoce project in 2010 from his parents' garage in Condrieu. Now he sources from trusted growers in the Northern Rhône, with 80% white production aimed at freshness balanced with substance. Thoughtful, evolving wines.
