A bolder, richer sake from Niigata, a prefecture better known for making the lightest, driest sake in Japan. Kaetsu Shuzo has been brewing in Aga, in the Higashi-Kanbara district, since 1880, and under toji Kenichiro Yamaga the house deliberately builds more body and aroma than the regional norm. The name comes from a local legend: mysterious lights seen on Mount Kirin were said to be a fox wedding procession, and the town still stages a fox-bride parade every spring. This is junmai ginjo made from Gohyakumangoku rice milled to 50 percent, a polishing ratio that would legally qualify it as daiginjo, though the flavor lands squarely in richer ginjo territory. At 16.5 percent alcohol with a nihonshu-do of +3, it is dry-leaning but generous. Serve it lightly chilled, or let it come up toward room temperature to bring out the nutty side.

Perfect Pairings

Excellent with duck breast, pork loin stuffed with figs, or miso-glazed black cod. Also good with grilled yakitori, roast mushrooms and aged hard cheeses.

Tasting Profile

Aromas of toasted nuts, pistachio and a hint of white chocolate, with honeydew melon underneath. Medium-bodied and rounder than typical Niigata sake, with soft texture and moderate acidity. Finishes crisp, faintly sweet and clean.
