Most Daiginjo chases delicacy; this one has a plush, almost tropical side that catches people off guard. It is brewed at the Higashiyama brewery in Fushimi, the Kyoto district whose soft, low-mineral water has for centuries made its sake rounder and gentler than the sharper styles that come from harder-water regions. The rice is Yamada Nishiki, the benchmark sake variety, milled down to 50% of its original size, and unlike the brewery's Junmai Daiginjo a small measure of distilled alcohol is added here — a traditional technique that lifts the aromatics and lightens the body rather than sweetening anything. Konteki means "dew drops of the earth," and this bottling takes its name from brewery workers watching dawn break over the mountains and the dew catch the light. At 15.5% it sits just under wine strength: serve it well chilled in a wine glass rather than a thimble, and let it open up a few degrees as you drink.
