La Visciola is widely considered the reference producer for Cesanese, Lazio's indigenous red grape grown in the hills southeast of Rome. Piero Macciocca and his wife Rosa established the estate in 2005, farming biodynamically from the start (certified Biodyvin since 2019). Priore Ju Quarto comes from a single parcel of 60-year-old vines at 350 meters elevation on red clay soils—only about 1,000 bottles produced annually. The wine ferments spontaneously in concrete with native yeasts, spends 20-30 days on skins, then ages in concrete for 12-15 months. Unfined, unfiltered, and bottled with minimal sulfur. Cesanese produces wines unlike anything else in Italy: medium-bodied with sour cherry fruit, herbal notes, and an earthy rusticity that pairs beautifully with Roman cuisine—carbonara, cacio e pepe, or roasted lamb.
