This is the bottle our staff reaches for whenever there's something to toast, and it has been for years. It's 100% Pinot Noir from Écueil, the Premier Cru village in the Petite Montagne de Reims whose sandy soils over chalk give an unusually delicate expression of the grape — about 8% of the blend is raised in oak, and the 2021 base is fleshed out with 45% reserve wine from 2020 and 2019. Géraldine Lacourte, whose great-grandparents founded the domaine in 1947, runs it with her husband Richard Desvignes; they left city careers to come back to the vines in 2006, learned winemaking from Eric Rodez, and have bottled all of their own fruit rather than selling it off since 2013. Farming is Demeter-certified biodynamic, fermentation is by ambient yeast with very little sulfur, and dosage is kept minimal here at 3 grams. All marzipan, violet, strawberry and cherry blossom, this is a Pinot lover's rosé rather than a simply fruity one — ready now, and good for two to four more years.

Opening with enticing aromas of tangerine zest, red apple and red plum, it leads into a medium- to full-bodied, elegant palate underpinned by a racy spine of acidity and ample chalky structure, concluding with a delicately perfumed finish.
