A bouquet in a bottle, and the fan favorite of the house: Aurelien Laherte's Rose de Meunier is a Champagne rose built entirely out of the region's most underrated grape. It is assembled three ways from that one variety — roughly 60% Meunier macerated on its skins, 30% pressed straight off as white wine, and 10% still red Meunier — which gives it far more aromatic lift and texture than a rose blended the conventional way. The fruit comes from parcels in the Coteaux Sud d'Epernay and the Vallee de la Marne around Chavot, the family village, where Laherte has been the seventh generation since 2005, farming organically and biodynamically. Fermentation happens in large wooden foudres, malolactic is only partial, and the dosage stops at 2.5 grams per liter — Extra Brut, and it needs nothing more. This one is built on the 2023 harvest. Open it at the table rather than in the doorway; it has enough grip to handle real food.
