Pale salmon in the glass and deceptively tame-looking, until you taste it and get waves of grapefruit, blood orange and tart strawberry juice riding on bracing acidity and real salinity. It is Garnacha from the Sierra de Gredos, where poor granite soils, high elevation and old vines turn a grape often written off as boozy and brash into something ethereal. Las Pedreras was founded in 2020 by Bárbara Requejo, a Ribera del Duero-born winemaker who trained at Haut-Brion, Pierre Peters and Peay before setting up here, and Guzmán Sánchez, a Gredos native and restaurateur; they farm just over three hectares organically, dry-farmed, across a range of altitudes and exposures. Rose in this style — stony, structured, genuinely mineral — is rare enough that this one is worth buying by the case rather than the bottle. It has everything we look for in serious pink wine.
