The Reine Claude, or greengage, is the plum that fruit brandy was practically invented for, and Laurent Cazottes treats it accordingly. He grows his own in the Tarn, farms organically, picks at full ripeness, and dries the fruit on mats to concentrate it before fermentation. Pot distillation follows, and then a slow reduction with demineralized water instead of a hard cut, which is what keeps the perfume intact. The result is startling: green plum flesh, almond, honeysuckle and a faint whisper of the pit, completely dry, with nothing added to soften the edges. It takes a small mountain of fruit to fill even this half-size bottle, and you can taste every bit of it. Serve it cool, never frozen.
