In Vouvray a single vintage can come out dry, tendre (lightly off-dry) or sweet, and Peter Hahn doesn't force the issue. He lets the wine decide, and 2023 came out dry. The fruit comes from Hahn's four parcels of old-vine Chenin Blanc, about 15 km from Tours. It was picked by hand, pressed slowly in the estate's century-old basket press and fermented with native yeasts. It then aged in neutral oak in a cool cellar carved into the hilltop and rested a full year before bottling. The farming is just as hands-on: the grapes are organic, and every vine is pruned by hand, cane by cane, with no pre-pruning machines to pack down the soil. Hahn arrived at this four-hectare property in 2002, wrote a book about life there called 'Angels in the Cellar', and picks a single piece of music for each vintage to play in the cellar while the wines rest. That's charming, but the real reason to buy it is simple: this is a pure, mineral, natural Vouvray Sec for anyone who thinks Chenin is the Loire's great white grape.
