Aligote is Burgundy's underdog grape, and in the right hands it's one of the great everyday whites of France. Catharina Sadde of Les Horees sources hers from domaine-owned parcels in Pommard and Volnay, including some vines well over a century old, farmed organically and biodynamically. What makes this bottling stand out is the winemaking: a third of the fruit is macerated on the skins for a few days, the rest whole-cluster pressed, then everything ferments on wild yeast and rests in old barrels. The result has more texture and depth than most Aligote, without losing the grape's signature snap. A brilliant reminder that terroir matters more than pedigree.
