Catharina Sadde built her Beaune micro-negocie the hard way, working alongside the likes of Domaine de la Romanee-Conti and Marquis d'Angerville before striking out on her own with organic, biodynamically farmed fruit. This is her Gamay-forward entry into Burgundy: a red Coteaux Bourguignons that keeps the grape's juicy, berry-bright charm but runs it through a serious Cote de Beaune sensibility. Native-yeast fermentation, used barrels, barely-there sulfur, and a whole lot of energy in the glass. Give it a light chill and it's the definition of an everyday Burgundy that overdelivers. Proof that the entry rung of a great cellar can be the most fun.
