Fino is the bone-driest expression of Sherry, and Lustau's Puerto Fino is a textbook bottling from the seaside town of El Puerto de Santa Maria. It's aged biologically under a living veil of flor yeast, which protects the wine from oxygen and gives Fino its pale color, bracing dryness and distinctive tang of sea air and yeast. This is the ultimate aperitif: serve it well chilled in a decent-sized glass, treat it like a white wine, and drink it fresh within a few days of opening. Few wines wake up an appetite like a cold Fino.
