Experience the rarest expression of sherry: a wine concentrated through sun-drying grapes into near-raisins, then aged a dozen years in solera. Bodegas Lustau, founded in 1896, transformed from almacenista to the only producer operating in all three cities of the Sherry Triangle. Their Pedro Ximénez 'San Emilio' represents sherry's richest tradition—grapes dried 5-15 days until they've lost most water, then aged in the solera system's fractional blending. The result is ebony-hued velvet: figs, dates, raisins, enormous sweetness. A meditation wine, not a casual pour.
