A Pouilly-Fuissé from a single named clos, released with no vintage on the label, is an unusual thing in a part of Burgundy that sells nearly everything by the year. It comes from a family with a long habit of ignoring what the neighbours do. Philippe Valette's father was the first farmer in the region to stop selling his grapes to the co-op and bottle his own domaine wine. When Philippe finished wine school in 1990, he decided to convert the vineyards to organic farming. Today he farms his Chardonnay without chemical treatments, which is a big part of why he's known as one of the godfathers of natural winemaking in the Mâcon. The house is patient in the cellar too: depending on the cuvée and the year, wines spend anywhere from six months to five years in old oak. If you think of Pouilly-Fuissé as a safe restaurant white, this bottle shows what it looks like from a grower who treats it as something worth thinking about.

More about Maison Valette

If you think Mâconnais Chardonnay is simple, early-drinking stuff, the Valettes of Chaintré will change your mind. Their whites spend two, three, sometimes many more years on their lees in old barrels before release, and they come out rich, layered and still full of tension. This is the Mâcon made with the patience of a great Meursault.

Chaintré sits at the southern tip of Burgundy, where the Mâconnais meets Beaujolais. The family has worked here for three generations. Gérard Valette left the local co-op in 1977 to bottle his own wine, one of the first growers in the area to do so, and his son Philippe, who finished wine school in 1990, began converting the clay-limestone vineyards (roughly eight and a half hectares, all Chardonnay) to organic farming.

Harvest is by hand, often late, and fermentations use native yeasts, with little or no added sulfur and no fining. Wines can be multi-vintage blends marked with tiny lot numbers rather than a single year. Some bottlings are simply too unusual for the rulebook: the appellation tasting panel once rejected the Et Pourtant cuvée as "too atypical," so it's sold as Vin de France. The range runs from Mâcon-Villages and Mâcon-Chaintré Vieilles Vignes up to the Pouilly-Fuissé clos, Clos Reyssié and Clos de Monsieur Noly.

Tasting Profile

Expect a riper, rounder take on Chardonnay than Chablis: yellow apple, pear and citrus, with a hint of hazelnut and the chalky, stony edge typical of Pouilly-Fuissé. Time in old oak typically brings a rounded, textured palate without obvious wood flavour, while bright acidity keeps it fresh through a dry, savoury finish.
