A rare sparkling expression of the Timorasso grape whose acidity and mineral complexity lend themselves to the style. After a gentle pressing and fermentation in stainless steel, the wine spends two years on the lees. Already showing brioche, toast, and hazelnut autolytic notes, its salty, waxy character, along with creamy mousse and small bubbles, make for an alluring, absolutely delicious wine. Bright enough for typical oyster pairings, but robust enough to drink with a fine steak or pork chop as well.
