Gamay d'Auvergne off fifty-year-old vines on a west-facing slope at four hundred metres, picked in whole bunches in the morning cool, given eight days of carbonic maceration, and raised in fibre tanks with no sulfur, no fining and no filtration. Vincent Tricot was born in Anjou and learned the trade at wine school in Beaujolais, under the influence of non-interventionists like Marcel Lapierre; in 2002 he and Marie moved the family to the village of Orcet in the Auvergne, bought four and a half hectares of organic vines, and have made wine without additives, added SO2 or chaptalization ever since. The Auvergne holds one of the largest concentrations of pre-phylloxera vines in France, and the Tricots' bottles became natural wine bar sensations in Paris well before they reached New York. The site here is clay and limestone rather than the pink basalt found across much of the region, which gives a rounder, fruitier Gamay. Serve it cold and drink it young - this is a bottle for a long lunch, not the cellar.

Vincent Tricot studied oenology in Beaujolais and apprenticed with Marcel Lapierre and the early natural winemakers before moving with Marie and their two daughters to Auvergne in 2002. They farm 4.5 organic hectares and make everything—Gamay, Chardonnay, Pinot Noir—without any added sulfites. Auvergne's most important natural wine voice.
