One of the original organic estates of Les Baux-de-Provence — certified since 1975, which is borderline unbelievable for the era. The Cartier family has worked these stony, sun-baked fields below the Alpilles since the 1700s, and Luc, Lucienne, and daughter Eve handle the modern chapter with the same hand-tended approach. The Rouge is a hearty, spicy southern blend of Grenache, Syrah, Cabernet Sauvignon, and Carignan, fermented on indigenous yeasts with very low added sulfur. The Cabernet gives it a backbone you don't always find in Provence reds, and the limestone-and-galet soils lend a savory wild-herb lift that screams garrigue. Juicy, structured, and savory — a French favorite that punches well above its weight.

Perfect Pairings

A natural with lamb daube, grilled merguez, ratatouille, or a roast chicken rubbed with herbes de Provence. Also lovely with a slab of aged tomme and some olive tapenade.

Tasting Profile

Red plum, spiced cherry, and wild currant over a savory garrigue lift of thyme, rosemary, and crushed stone. Medium-bodied, structured, mineral, with refreshingly low sulfur and indigenous-yeast purity.
