Michel Couvreur, a Belgian, pioneered French whisky in Burgundy—a decision his wife opposed until they settled on it. He buys single malts in bulk, matures them in 100-year-old sherry and port casks, and bottles the result. Since his death in 2013, his son-in-law carries the torch.
