Pinot Grigio made by Benedictine monks — and made like it matters, which is not how this grape usually gets treated. Muri-Gries is a working monastery in Gries, just outside Bolzano, where the monks handle the spiritual side and the winemaking has long been left to laymen (the secular Werth family ran the cellar for decades, with Christian Werth handing the keys to Manfred Bernard after more than 36 years). The house is unapologetically a red-wine producer at heart — Lagrein is the passion — which makes its two dry whites feel less like a commercial obligation and more like something they actually wanted to get right. The Pinot Grigio comes from hillside sites around Bolzano and Appiano between 260 and 500 metres, on calcareous gravel. The house point of view is that Pinot Grigio, Alto Adige's most planted variety, turns robust and almost Burgundian here — which is to say this is a bigger, more serious wine than the name leads you to expect.
