Nikolaihof is Austria's oldest documented winery — records of viticulture on this site in Mautern date to the 5th century — and since the 1970s it has been among Europe's pioneering biodynamic estates, Demeter-certified decades before the term became fashionable. The 'Baumpresse' takes its name from the traditional wooden basket press the estate still uses, a practice as old as the cellars themselves. The 2015 vintage in Wachau was a warm, classical year, and this Riesling has been evolving slowly in the estate's ancient Roman cellars under Christine Saahs's watchful eye. Mighty minerality is what you find here — the Danube terraces, the stone soils, and decades of biodynamic farming converging in a glass. This is wine with genuine history behind every sip.

"The 2015 Riesling Baumpresse was pressed in the historic press operated by a single oak beam. It was bottled in 2020 and released in spring 2023. Waxiness hits the nose first, followed by dried lemon peel and zest. The palate is super-smooth, with evolution that presents an intense waxiness, almost an oiliness, propelled by lemony intensity. Glints of ripe apricot shimmer, but the palate returns to its golden mean of dried lemon peel. The contrast between rich flavor and slender palate is mind-boggling. This is earthy yet elegant, memorable and intense in its flavor, yet quiet in its delivery. The Baumpresse is gorgeous and long, closing with hints of waxy citrus." —Anne Krebiehl MW

Nikolaihof is a trailblazing traditionalist: Biodynamic since 1971, its written winemaking history goes all the way back the monks who farmed there in the 5th Century (no, there’s no missing digit there). Today the family still practices an integrated farming like the monks did, involving farms without herbicides, pesticides or artificial sprays, making the wine with natural fermentations and ancient Austrian oak in their 700 year old cellar.
