Austria's oldest continuously operating winery (documented since 470 AD) brings biodynamic discipline and lees aging to Grüner Veltliner from the UNESCO-listed Wachau. "Hefeabzug" means the wine remains in contact with fermentation sediment—a technique that adds richness and textural weight to what might otherwise be a lean varietal. The Wachau's metamorphic terrain (gneiss, marble, loess) and the Danube's temperature moderation create conditions for crisp minerality without austerity. Natural fermentations in a 700-year-old cellar, 40-50 year old vines. Nikolaihof has practiced biodynamics since 1971 (Demeter certified since 1998). The 2023 balances Grüner's inherent acidity with body and textural presence. Drink now through 2028. Chill slightly; pair with white fish, shellfish, Asian cuisines, or creamy cheeses.
