Cult Chinon Cabernet Franc from a south-facing slope on the Vienne River's north bank. Vines over 50 years old on clay and chalky tuffeau limestone. When founder Olga's husband Pierre died in 1947, she continued with help from Ernest Zenninger, a German POW who became winemaker. Now fifth-generation: Sylvie Raffault with husband Eric de la Vigerie and son Arnaud. 25 hectares total, organic certified since 2013. Whole-berry fermentation, 25-30 days in stainless steel, aged minimum 4 years in old foudres before release. The family maintains a deep library.

Olga Raffault never actually made wine—she was just the unforgettable owner for many years. Now her granddaughter Sylvie and Sylvie's husband Eric run the 24-hectare estate in the Véron, between the Loire and Vienne rivers, where five generations of Raffaults have worked. 23 hectares of Chinon from Cabernet Franc, just converted to organic, picked by hand, fermented native. The flagship Les Picasses from south-facing slopes speaks in a voice that's elegant and utterly Loire.

100% Cabernet Franc. Les Picasses is the most famous Chinon lieu-dit, close to the village of Beaumont-En-Véron on the north bank of the Vienne River. It is a slope with full southern exposure and chalky clay-limestone soils. Raffault's mid-slope vines are at least 50 years old and are worked organically and harvested by hand. The fruit is destemmed with the berries left whole; they are fermented with indigenous yeasts in tank with a maceration of 25-30 days. The wine is aged for one to two years in 30-hectoliter oak and chestnut foudres; it is then aged in bottle for several years before release.
