Thomas Pico of Pattes Loup has redefined what’s possible in Chablis, crafting wines that channel both old-school intensity and a more natural, hands-off approach. Farming organically since 2009 and working with extended élevage, he teases out a depth and texture rarely seen outside the region’s elite. The Vent d’Ange Mise Tardive is a special late-bottled release, allowing extra time on the lees for added complexity and structure.

The 2022 vintage brings incredible balance—ripe orchard fruit and citrus oil up front, with layers of crushed stone, oyster shell, and a whisper of hazelnut from the long aging. The palate is expansive yet taut, unfolding in waves of salty minerality and mouthwatering acidity. This is Chablis that drinks well young but will reward patience, pairing effortlessly with briny seafood, creamy pastas, or just a quiet moment to savor its depth.

Focus On: Burgundy

Burgundy has long been the world's most famous wine region. But, underneath all the prestige, this region can be hard to get to know.

While Burgundy offers many great trophies from top producers in well-known villages like Vosne Romanee and Puligny Montrachet, it also offers excellent values to anyone willing to explore beyond the famous names. Our collection– one of the largest in the U.S. – has plenty of both!

From the very basics of Burgundy's regions and wines to the specific terroirs of individual single vineyards--
everything you need to know about Bourgogne is just a click away!
