We've always said Pavelot's La Dominode is beautiful only after many years of patience, and this 2009 magnum has already done the waiting for you. The domaine calls the cuvée its spearhead: a wine for lovers of power, built to age around fifteen years. Some people consider La Dominode the best premier cru in Savigny-lès-Beaune. It's also a vineyard you'll often not find on wine maps, tucked between Les Marconnets and Les Jarrons on a moderate east-facing slope of clay with a large share of sand. The name comes from the Latin dominus, because the vineyard originally belonged to the lord of Savigny. Pavelot farms 2.22 hectares there, and nearly half those vines were planted in the 1930s. Savigny doesn't get the attention its Côte de Beaune neighbours do, which is exactly why a mature premier cru like this, in a format that ages slowly and pours for a crowd, is such a smart buy. The house's advice is to serve it a touch cool, at 14-16°C.

"This is perhaps the ripest wine in the range with a liqueur-like nose of black cherry, earth and underbrush hints that introduce rich, serious and concentrated flavors that possess an abundance of mid-palate extract as it almost completely buffers the otherwise very firm tannic spine, all wrapped in a palate staining finish." —Allen Meadows

Antonio Galloni

"Good ruby-red. Crushed blackberry, raspberry, mocha and menthol on the nose, with a suggestion of superripeness. Silky, juicy and sweet, offering a rare combination of sheer sucrosite and inner-mouth lift; terrific dark fruit intensity here. Shows little sign of surmaturite or heat in spite of the 13.5% alcohol. Finishes with ripe, granular tannins, a note of licorice and lingering sweetness. The Pavelots made 40 barrels of this superb and atypically powerful wine." —Stephen Tanzer

More about Pavelot

Domaine Jean-Marc & Hugues Pavelot represents four generations of Savigny-lès-Beaune winemaking on just under 12 hectares. Hugues is at the helm now, and the estate owns extensive premier cru holdings in Savigny plus additional Chardonnay and Pinot Noir in Pernand-Vergelesses and Corton. There's also a separate operation run by Luc and Lise Pavelot in Pernand-Vergelesses. Both branches make serious, terroir-driven Burgundy from a village known for value and quality.

Tasting Notes & Food Pairings

Perfect Pairings

Beef bourguignon, wild boar filet mignon, or venison in sauce grand veneur. For the cheese course, try Époisses, Cîteaux or Soumaintrain.

Tasting Profile

Expect a fuller, firmer take on Savigny-lès-Beaune Pinot Noir: dark cherry and red plum with earthy, spicy notes, in a polished house style. It's medium- to full-bodied with fresh acidity and firm, fine tannins built for long ageing; with time the style typically softens toward forest floor, leather and savoury depth, finishing long and dry.
