Taut, high-tension Meursault from a young winemaker who made a serious splash before he turned 25. Pierre-Vincent Girardin is the son of Vincent Girardin — a 1990s Burgundy star — and launched his own domaine in 2017 from parcels his father held back, farming with a light, biodynamic-leaning hand. "Meix Chavaux" is a village lieu-dit sitting mid-slope on limestone, a cooler site that gives this white a cold, mineral cut rather than Meursault's usual richness. He ages in larger 456-liter barrels to dial back new oak, works with low sulfur, and lets the site speak. Even at village level, these wines carry the taut structure and soaring energy of top-tier white Burgundy. A benchmark example of what the next generation of Meursault can do.
