Reposado is the sweet spot in tequila — "rested," which by law means at least two months in oak and less than a year. That is enough barrel time to round off a blanco's edges and lend a little vanilla and warm spice, but not so much that the agave vanishes under wood. Rejon's keeps the cooked-agave core front and center, with oak playing support rather than lead: roasted agave and citrus peel, a touch of caramel, pepper on the finish. Drink it neat in a proper glass to see what it's actually doing, or let it carry an Old Fashioned or a rested-tequila Negroni. It's the style of tequila that makes the best case for slowing down and sipping.

Rejon comes from old-vine Tempranillo in Spain's Castilla y León, aged for 20 months in French oak to give it some muscle and complexity. Made by Bodegas Tridon, it's the kind of wine that reminds you that Spain's got serious depth if you look beyond the obvious names. Aromas of dark fruit and spice, solid structure—this is a wine that works with dinner, not against it. No fuss, real quality.
