Sancerre fruit without the Sancerre label — this is Vin de France, and that's exactly why it's worth your attention. The vines sit in Amigny, a hamlet just south of Chavignol, home to a high concentration of Kimmeridgian-based terroirs, and they're farmed organically and biodynamically by brothers Mathieu and Benoit Fleuriet, who took them on when their best friend Stephane Marchand was diagnosed with a heart condition incompatible with managing his vines. Marchand asked that the project be called Renaissance: once organic certification came through, he felt his terroirs had been born again. Everything is picked by hand into small boxes — they're among the last around here to refuse machines — sorted on a table, then pressed under nitrogen in a gravity cellar, which lets them go essentially sulfur-free until bottling. Fun aside: the Fleuriets weren't vignerons at all to begin with, but cattle and goat farmers making Crottin de Chavignol, and only planted vines in 1991. Drink it for the freshness and the fact that you're getting that hillside without paying the appellation's name.

Perfect Pairings

Goat cheese, naturally — Crottin de Chavignol on toast is the home pairing. Also oysters and mignonette, sole meuniere, asparagus with lemon butter, ceviche, spring pea risotto, or a salad of shaved fennel and herbs.

Tasting Profile

Dry white with citrus, green apple and fresh-cut herbs on the nose, plus a chalky edge. Light to medium bodied, bright and clean on the palate, with crisp acidity and a dry, stony finish. Serve cold.
