Llum is Catalan for light, and that's the trick of this wine — it carries the sunbaked weight of the Roussillon without ever feeling heavy. Marjorie Gallet blends Grenache Blanc, Grenache Gris and Macabeo, three southern grapes that most of the region has historically used for bulk and that she uses for tension. The farming is biodynamic, and the wine has the unmistakable Roc des Anges signature: dry, savory and mineral, more about salt and texture than about fruit. Medium-bodied and drinking beautifully right now, it's a house white with actual character — the bottle that quietly disappears at the table before anyone notices. Serve it cool, not cold.
