A Valpolicella built with a little Amarone thinking, but only a little: about 70% of the fruit goes in fresh, while the other 30% is dried for roughly 20 days — just enough dehydration to shift the skin-to-must ratio and add concentration and spice without sacrificing the bright cherry fruit that makes Valpolicella worth drinking in the first place. The Sartori family keeps a section of the vineyard aside for this wine alone, so none of these grapes get siphoned off to Amarone. The vines sit on the eastern slope of the Lessini Hills on decomposed volcanic rock studded with glacial stone, and pruning is done plant by plant to hold yields down. Twenty months in wood — large French barrels plus some Slavonian casks — then assembly and bottling. Bruno Sartori started the estate with his children Marco and Francesca in 1996, and they still run it together with the stated aim of making a small number of bottles very well. Marco has been drying his grapes for less time than he once did and fermenting cooler for gentler extraction; this is the freshest, most drinkable expression of that thinking.

Braised short ribs with polenta, duck ragù over pappardelle, roast pork loin with fennel, risotto all'Amarone, mushroom lasagne, or a plate of aged Monte Veronese and speck.

Tasting Profile

Deep ruby. Sour cherry and small red berries up front, with tobacco, white pepper, graphite and a little coffee behind. Medium to full bodied and concentrated without heaviness, with firm but fine tannins and enough acidity to keep it lively. The finish is savory and spiced rather than sweet.
